Elimination Diet, Day 6...

I started an Elimination Diet "prescribed" to me by my Doctor this past Monday.
In essence, I have eliminated dairy, gluten, sugars, caffeine...and alcohol. Gulp. ;)
I must admit, I have longed for coffee a few times this week...and same with a nice glass of wine. I mean come on, i have already gone without caffeine and wine for 30 months in the past 4 years approximately...now I have to go another month. lol. Yes, last night, I cheated and had wine with dinner on our date night...without too much guilt.

Otherwise, I have been staying strong. The diet really is clean eating. No processed foods, sauces (because of hidden gluten's and sugars)...probably all in all a rather sensible way of eating. But when someone tells you you cant have it, why is it that you want it even more...even if you never really cared for it in the past!?

I am not on this diet to lose weight. I am please with where I am at the moment. I hit my pre-baby weight fairly quickly after T was born. I think its in my genes...that and I work my ass off to fit into my jeans. Ok I will stop with the lame jokes. Now for toning. But, I am on this diet to determine what I react to...why my body is so "inflamed," so to speak. I suffer eczema as I have noted prior, I suffer IBS as well as visionary and occasional full on, migraines. All of my "primary issues" are caused due to inflammation of some sort. So here I am, Doctor guiding the way, to determine what I am putting in my body that may cause these symptoms.

So far, I have been feeling a little more tired along with more bloated, apparently both normal in the first week. However, already, my severely nasty hands ridden with eczema are a thing of "last week." They still have a ways to go, but they are already looking like night and day...and the eczema on my arm has cleared right up...something must be going right!?

I will keep you posted as to my progress through my trials. I am sure some of you deal with one or more of my symptoms...and if I have any form of success, for me, it will be a victory.

I baked the kids chocolate chip cookies yesterday, and have been craving one SO bad...so I cheated ever so slightly and made myself a batch of gluten free/dairy free chocolate chip cookies.
I took a recipe and modified it even further as it originally called for so much sugar and eggs...and I HONESTLY have to say, they turned out fantastic! So yes, I am not allowed sugar; but I figure, if I am going to cheat...at least the main causes being gluten and dairy are not to be found.

Here are my Gluten Free/Dairy Free Chocolate Chip Cookies




Ingredients:

2 1/4 cup G-free Flour (I use the Red Mill brand)
1 tsp baking powder
1 tsp baking soda
pinch of sea salt
3/4 margarine (or dairy free butter if have) room temp if butter
1/2 cup sugar (i used brown sugar/splenda)
3 egg whites*** instead of the eggs, mix 2 tbps milled flax seeds with 1/4 cup water (perfect egg replacement)***
1 tbsp vanilla
chocolate chips (your call if you want lots or little)

mix all dry ingredients in bowl
in separate bowl mix wet ingredients
blend together
last stir in the chocolate chips

drop spoonfuls of batter onto greased cookie sheet or sheet lined with parchment paper.
bake for approx 10 minutes at 375F
